What is a Molecule?

One of the things I keep meaning to do more of with this blog is provide some post on basic science concepts that may help raise scientific literacy. Some of these will be pretty obvious but even reminders on some facts you know can sometimes help.

What is a molecule?

A molecule is the smallest particle of a compound that has all the chemical properties of that compound. Molecules are made up of two or more atoms, either of the same element or of two or more different elements. The example of molecules are water (H2O) and carbon dioxide (CO2) and molecular nitrogen (N2).

Organic molecules contain Carbon, for example, Methane CH4). The original definition of “organic” chemistry came from the misconception that organic compounds were always related to life processes.

A few types of compounds such as carbonates, simple oxides of carbon and cyanides, as well as the allotropes of carbon, are considered inorganic. The division between “organic” and “inorganic” carbon compounds while “useful in organizing the vast subject of chemistry…is somewhat arbitrary”

Ionic compounds, such as common salt, are made up not of molecules, but of ions arranged in a crystalline structure. Unlike ions, molecules carry no net electrical charge.

The Calorie Delusion

The calorie delusion: Why food labels are wrong

Nutritionists are well aware that our bodies don’t incinerate food, they digest it. And digestion – from chewing food to moving it through the gut and chemically breaking it down along the way – takes a different amount of energy for different foods. According to Geoffrey Livesey, an independent nutritionist based in Norfolk, UK, this can lower the number of calories your body extracts from a meal by anywhere between 5 and 25 per cent depending on the food eaten.

Dietary fibre is one example. As well as being more resistant to mechanical and chemical digestion than other forms of carbohydrate, dietary fibre provides energy for gut microbes, and they take their cut before we get our share. Livesey has calculated that all these factors reduce the energy derived from dietary fibre by 25 per cent

“Cooking gives food energy,” says Wrangham. It alters the structure of the food at the molecular level, making it easier for our body to break it up and extract the nutrients.

In plants, for example, much of the energy from starch is stored as amylopectin, which is semi-crystalline, does not dissolve in water, and cannot be easily digested. Heat starchy foods with water, though, and the crystalline forms begin to melt. The starch granules absorb water, swell, and eventually burst. The amylopectin is shattered into short starch molecules called amylose, which are easily digested by the enzyme amylase.

It seems pretty obvious, just looking around, as you walk around in any city that people are much fatter, on average, than we were 20 years ago. And the data shows people were much larger (taller, but also fatter) 20 years ago than they were 100 years ago. And we know obesity causes many human health issues. The failure to address the obesity problem in the USA is another example of the failed “health care” system. Instead of a working health care system we just manage diseases that result for unhealthy living. We should be do better at providing information to people on healthy eating (including more accurate calorie counts as it concerns food we eat) and healthy lifestyle choices.

Paper Towels vs Electric Dryer

Sustainability Showdown: Paper Towels vs Electric Dryer

First off, let’s address one common misconception: for the most part, nobody’s cutting down trees just for paper towels. Most paper towels you find in public bathrooms are made from recycled paper, and even those that aren’t are made from industrial waste created in the manufacturing of regular paper.

The reason hand dryers came out ahead ended up having surprisingly little to do with the actual act of drying your hands. Most of the emissions and contributions to greenhouse gases come from decomposition of the towels in a landfill.

Like all life-cycle analyses, this one’s a bit messy, but no studies appear to support the use of paper towels over a hand dryer. Even in the best paper cases, hand dryers come out ahead. To top it off, if a business uses 100% clean energy, the impact and emissions from a hand dryer become a orders of magnitude better than those for paper towels.

So the next time you’re standing with drippy hands and a dilemma on the wall, you can choose the hand dryer, and let the green part of your brain breathe freely.

Sun Missing It’s Spots

Sun Oddly Quiet

The sun is the least active it’s been in decades and the dimmest in a hundred years. The lull is causing some scientists to recall the Little Ice Age, an unusual cold spell in Europe and North America, which lasted from about 1300 to 1850. The coldest period of the Little Ice Age, between 1645 and 1715, has been linked to a deep dip in solar storms known as the Maunder Minimum.

Sunspots, which can be visible without a telescope, are dark regions that indicate intense magnetic activity on the sun’s surface. Such solar storms send bursts of charged particles hurtling toward Earth that can spark auroras, disrupt satellites, and even knock out electrical grids.

Antigen Shift in Influenza Viruses

Antigenic shift is the process by which at least two different strains of a virus, (or different viruses), especially influenza, combine to form a new subtype having a mixture of the surface antigens of the two original strains.

Pigs can be infected with human, avian and swine influenza viruses. Because pigs are susceptible to all three they can be a breeding ground for antigenic shift (as in the recent case of H1N1 Flu – Swine Flu) allowing viruses to mix and create a new virus.

Lenz’s Law in Action: Eddy Current Tubes

Eddy Current Tubes — Drop the Magnets down the tube. An eddy current is set up in a conductor in response to a changing magnetic field. Lenz’s law predicts that the current moves in such a way as to create a magnetic field opposing the change; to do this in a conductor, electrons swirl in a plane perpendicular to the changing magnetic field.

Because the magnetic fields of the eddy currents oppose the magnetic field of the falling magnet; there is attraction between the two fields. Energy is converted into heat. This principle is used in damping the oscillation of the lever arm of mechanical balances.

Bacteria Communicate Using a Chemical Language

Each person has about 1 trillion human cells and about 10 trillion bacterial cells. In the webcast Bonnie Bassler, Department of Molecular Biology at Princeton University, discusses the chemical language that lets bacteria coordinate defense and mount attacks (quorum sensing). The find has stunning implications for medicine, industry — and our understanding of ourselves.

Bacteria do all sorts of amazing things for us: educating your immune system to keep bad microbes out, they digest our food, they make our vitamins…

What is on the Other Side of Earth?

Do you ever wonder what is on the exact opposite side of Earth? This website uses Google Maps to let you see: Antipodes Map. It also makes clear how much of the earth is covered in oceans. The entire continental USA is opposite ocean. Hawaii is opposite Botswana and Namibia. Hong Kong is opposite Argentina. Singapore opposite Ecuador. India, Ireland, Turkey, France and Egypt are among the many countries that opposite oceans. Madrid is opposite New Zealand.

Nearly Half of Adults in the USA Don’t Know How Long it Takes the Earth to Circle the Sun

Questions:

  • How long does it take for the Earth to revolve around the Sun?
  • Did the earliest humans and dinosaurs live on the earth at the same time?
  • What percent of the Earth’s surface that is covered with water?

According to the national survey commissioned by the California Academy of Sciences: only 53% of adults know how long it takes for the Earth to revolve around the Sun; only 59% of adults know that the earliest humans and dinosaurs did not live at the same time; only 47% of adults can roughly approximate the percent of the Earth’s surface that is covered with water. Only 21% of adults answered all three questions correctly. I sure hope readers of this blog do much better than that.

Despite the fact that access to fresh water is likely to be one of the most pressing environmental issues over the coming years, less than 1% of U.S. adults know what percent of the planet’s water is fresh (the correct answer is 3%).
